Longer finish than expected with minerality and a buttery cremé that drives the balance and complexity forward. Off-dry and yet the acids (with apple and pear) are in perfect harmony with the alcohol that leaves the palate both satisfied and also watering, wanting more. The mid-palate will be treated to buttery lemon curd and vanilla in the longer finish.

2020 Viognier  ($24) A full-bodied white. Tree fruits and complex citrus with candied pineapple and lemon curd add to the overall intensity of this wine. Longer finish than expected with minerality and a buttery cremé that drives the balance and complexity forward. Off-dry and yet the acids (with apple and pear) are in perfect harmony with the alcohol that leaves the palate both satisfied and also watering, wanting more. The mid-palate will be treated to buttery lemon curd and vanilla in the longer finish.

Conclusion on the finish.  Wait for it… after seven seconds you will feel a soft minerality that melts into a creamy mid-palate that begs for more. When paired with toasted sourdough and melted provolone and Caesar Salad with smoked salmon, this Viognier will come alive. The persistent and youthful apple and pear are augmented with pleasant notes of sweet candied pineapple and lemon curd. If this wine had a flaw, it would be that most Viognier is simply never this aggressive in alcohol (at 12.8%) while at the same time, it is so high in acid (at 6.3 g/L) – this makes for a wine that you will be able to easily pair or simply sip, chilled, by itself. Even though this wine never sat in oak, its complexity shows the care and craft of the winemaker.

Winemaker notes: Harvest 10/3/2020 Finished with primary fermentation on 11/1/2020.  No malolactic conversion.  No Oak.  All stainless steel.  Racked twice before bottling.  12.8% ABV. Bottled 5/15/2021.
